As I promised myself, today marks the beginning of me packing my own lunch to uni! Nonetheless, I didn’t have any morning classes (or afternoon ones as a matter of fact) today sooooo I pretty much spent the entire day just cooking. Although I should’ve read up more for Patho and PBL, which will probably make me feel uber stupid tomorrow.
ANYWAY, the entire point of packing lunch to uni is to… EAT HEALTHY!
And
a) save money
b) not starve because the cafeteria is still empty
c) not have to crack my brain to think of places to eat with
d) not have to drag people and their nerdy asses out of their geeky chairs to have lunch outside the vicinity of lifelessness
e) to try new recipes!
Except you know, the point is to pack easy to prepare lunches to uni because it’s not everyday that I have no 8 am classes. I ain’t gonna wake up at 4 just to make myself an extravagant lunch yo!
So, the moment of truth.
Today’s Project LunchBox consists of:

Fried rice with luncheon meat and long beans, butter chicken and CHERRY TOMATOES!
Have I told you cherry tomatoes are currently my favourite snack?? Yes, so instead of eating potato chips between meals like I used to, I’m snacking on cherry tomatoes now!
Butter chicken is a rather simple dish to prepare actually. The first time I made it, I made an effort to coat the chicken fillets in tempura mix and deep fry them before adding the sauce to the chicken. This time I couldn’t be bothered and just dumped the naked chicken fillets into hot oil and started making my sauce. It turned out okay though. Just that I think it needed a bit more black pepper to cover the milkiness. Took less than 30 minutes to prepare the dish (right from chopping the garlic) so it’s pretty good if you ask me!
In my opinion, I think the fried rice was pretty awesome
Luncheon meat and long beans are my favourite ingredients for fried rice and the rice was really fluffy and all (because it was cooled to perfection ahem). The eggs made my face and throat a bit itchy though
It’s the same feeling I had the last time I made egg fried rice. So probably shouldn’t eat it so often.
And have you noticed how neatly the food is arranged? Like airplane food? That’s because I LOOOOOOVE airplane food! I love how everything is so neatly arranged and how they manage to compartmentalise the different elements without actually using compartmented containers. I tend to finish airplane food because of that although they kinda suck sometimes.
Bah! That’s all for today. How long do you think I’ll last huh? I’m not sure myself.
